Learn to cook Hainanese Chicken Rice in 5 minutes
(Serves 6-8)

Ingredients:

1 large whole chicken, 1.5-1.7kg
100gm of shallots, peeled
100gm of garlic cloves, peeled
½ cup of vegetable oil
Salt
1 knob of ginger, crushed
1 bulb of garlic, top sliced
Salt
2 cups of rice
3 pandan leaves, knotted
3 slices of ginger
200gm of Korean kimchi, to serve

Ingredients for the sauce:
4 tablespoons of light soya sauce
2 tablespoons of Korean sesame seed oil
½ cup of chicken stock

Ingredients for the chili sauce:
3 chili, chopped
20gm knob of ginger, minced
20gm of garlic, minced
Wedge of lime
½ tablespoon of Korean pork bulgogi marinate


Directions for preparation:

1. Place all the ingredients for the chili sauce in a mortar and pestle with a squeeze of the wedge of lime. Pound until a smooth paste is formed.
2. Season the chicken liberally with the salt and allow to sit for 1 hour.
3. Stuff the cavity of the chicken with the knob of ginger and bulb of garlic.
4. Place the chicken in a pot and fill with water just enough to barely cover the bird. Season with some salt.
5. Cook over medium high heat for half an hour (the chicken should be simmered for about 20 minutes). Allow to sit in the hot poaching liquid for another 15 minutes.
6. As the chicken is cooking, blend the shallots and garlic cloves in the oil until you get a fine mince.
7. Fry the garlic and shallot mixture over medium high heat until well-browned. Reserve.
8. Wash the rice and place in a rice cooker. Add the fried shallot/garlic mixture, some slices of ginger, a sprinkle of salt, pandan leaves and about 3 cups of the chicken stock (used for poaching the chicken).
9. Cook the rice for about 10 minutes, stirring once halfway through the cooking.
10. Mix all the ingredients for the sauce.
11. Carve the chicken before drizzling the sauce all over and serving it with a bowl of the chicken rice. The Kimchi and chili sauce dip make great accompaniments.
